INGREDIENTS(MAKES 4 SERVINGS)
120g self rising flour
1-2 Garlic Cloves Crushed - I use Dorot frozen crushed garlic cubes from Trader Joes
130g low fat greek yogurt - I prefer the 2% greek yogurt from Trader Joes - it's really creamy and has a slightly better protein content than most. But, it will add a little fat and calories
60g low fat cheese (I like mozzarella, but feel free to try different kinds of cheese)
Pinch baking powder
garlic salt (I just give a couple dashes - we'll call this to taste)
parsley flakes
cooking oil spray
DIRECTIONS
In a mixing bowl, mix flour, greek yogurt, crushed garlic, baking powder, garlic salt
use your hands to form and kneed into dough
using a floured surface, cut into 4 equally sized pieces
form each one into a ball
roll each ball into the biggest piece you can
put 15g cheese in the middle of each
pinch all the corners together to create a pocket of cheese in the middle
flip over so the pinched side is down and re-roll each into the biggest pieces you can
oil pan on high heat
cook each piece in the pan approx 2 min on each side - sprinkle parsley on each side while cooking.
